EmmerEmmer wheat or hulled wheat is a type of awned wheat. Emmer is a tetraploid (4n = 4x = 28 chromosomes). The domesticated types are Triticum turgidum subsp. dicoccum and T. t. conv. durum. The wild plant is called T. t. subsp. dicoccoides. The principal difference between the wild and the domestic forms is that the ripened seed head of the wild plant shatters and scatters the seed onto the ground, while in the domesticated emmer, the seed head remains intact, thus making it easier for humans to harvest the grain.
SpeltSpelt (Triticum spelta), also known as dinkel wheat or hulled wheat, is a species of wheat that has been cultivated since approximately 5000 BCE. Spelt was an important staple food in parts of Europe from the Bronze Age to medieval times. Now it survives as a relict crop in Central Europe and northern Spain, and it has found a new market as a health food. Spelt is sometimes considered a subspecies of the closely related species common wheat (T. aestivum), in which case its botanical name is considered to be Triticum aestivum subsp.
Stem rustStem rust, also known as cereal rust, black rust, red rust or red dust, is caused by the fungus Puccinia graminis, which causes significant disease in cereal crops. Crop species that are affected by the disease include bread wheat, durum wheat, barley and triticale. These diseases have affected cereal farming throughout history. The annual recurrence of stem rust of wheat in North Indian plains was discovered by Prof. K.C. Mehta. Since the 1950s, wheat strains bred to be resistant to stem rust have become available.

Einkorn wheatEinkorn wheat (from German Einkorn, literally "single grain") can refer either to a wild species of wheat (Triticum) or to its domesticated form. The wild form is T. boeoticum (syn. T. m. ssp. boeoticum), and the domesticated form is T. monococcum (syn. T. m. ssp. boeoticum). Einkorn is a diploid species (2n = 14 chromosomes) of hulled wheat, with tough glumes ('husks') that tightly enclose the grains. The cultivated form is similar to the wild, except that the ear stays intact when ripe and the seeds are larger.

Winter wheatWinter wheat (usually Triticum aestivum) are strains of wheat that are planted in the autumn to germinate and develop into young plants that remain in the vegetative phase during the winter and resume growth in early spring. Classification into spring wheat versus winter wheat is common and traditionally refers to the season during which the crop is grown. For winter wheat, the physiological stage of heading (when the ear first emerges) is delayed until the plant experiences vernalization, a period of 30 to 60 days of cold winter temperatures (0° to 5 °C; 32–41 °F).
