ChaffChaff (tʃæf; UKtʃɑːf) is the dry, scaly protective casing of the seeds of cereal grains or similar fine, dry, scaly plant material (such as scaly parts of flowers or finely chopped straw). Chaff is indigestible by humans, but some livestock can eat it. In agriculture, it is used as livestock fodder, or is a waste material ploughed into the soil or burned. "Chaff" comes from Middle English chaf, from Old English ceaf, related to Old High German cheva, "husk".
Brown riceBrown rice is a whole grain rice with the inedible outer hull removed. This kind of rice sheds its outer hull or husk but the bran and germ layer remain on, constituting the brown or tan colour of rice. White rice is the same grain without the hull, the bran layer, and the cereal germ. Red rice, gold rice, and black rice (also called purple rice) are all whole rices with differently pigmented outer layers. Brown rice generally needs longer cooking times than white rice, unless it is broken or flour blasted (which perforates the bran without removing it).
Wild riceWild rice, also called manoomin, mnomen, Canada rice, Indian rice, or water oats, is any of four species of grasses that form the genus Zizania, and the grain that can be harvested from them. The grain was historically gathered and eaten in both North America and China, but eaten less in China, where the plant's stem is used as a vegetable. Wild rice is not directly related to domesticated rice (Oryza sativa and Oryza glaberrima), although they are close cousins, all belonging to the tribe Oryzeae.

Cereal germThe germ of a cereal grain is the part that develops into a plant; it is the seed embryo. Along with bran, germ is often a by-product of the milling that produces refined grain products. Cereal grains and their components, such as wheat germ oil, rice bran oil, and maize bran, may be used as a source from which vegetable oil is extracted, or used directly as a food ingredient. The germ is retained as an integral part of whole-grain foods.
BiofortificationBiofortification is the idea of breeding crops to increase their nutritional value. This can be done either through conventional selective breeding, or through genetic engineering. Biofortification differs from ordinary fortification because it focuses on making plant foods more nutritious as the plants are growing, rather than having nutrients added to the foods when they are being processed. This is an important improvement on ordinary fortification when it comes to providing nutrients for the rural poor, who rarely have access to commercially fortified foods.

In addition to protecting rice during the growing season, rice hulls can be put to use as building material, fertilizer, insulation material, or fuel. Rice hulls are part of the chaff of the rice. Rice hulls are part of the rice seed. The hull protects the grain during the growing season from pests. The hull is formed from hard materials, including opaline silica and lignin.
AmyloseAmylose is a polysaccharide made of α-D-glucose units, bonded to each other through α(1→4) glycosidic bonds. It is one of the two components of starch, making up approximately 20–30%. Because of its tightly packed helical structure, amylose is more resistant to digestion than other starch molecules and is therefore an important form of resistant starch. Amylose is made up of α(1→4) bound glucose molecules. The carbon atoms on glucose are numbered, starting at the aldehyde (C=O) carbon, so, in amylose, the 1-carbon on one glucose molecule is linked to the 4-carbon on the next glucose molecule (α(1→4) bonds).
AmylopectinAmylopectin ˌæmᵻloʊˈpɛktᵻn is a water-insoluble polysaccharide and highly branched polymer of α-glucose units found in plants. It is one of the two components of starch, the other being amylose. Plants store starch within specialized organelles called amyloplasts. To generate energy, the plant hydrolyzes the starch, releasing the glucose subunits. Humans and other animals that eat plant foods also use amylase, an enzyme that assists in breaking down amylopectin, to initiate the hydrolyzation of starch.
Oryza rufipogonOryza rufipogon, known as brownbeard rice, wild rice, and red rice, is a member of the genus Oryza. It is native to East-, Southeast- and South- Asia. It has a close evolutionary relation to Oryza sativa, the plant grown as a major rice food crop throughout the world. Both have an AA genome. O. glumaepatula is a related species according to molecular biology approaches. It used to be considered a synonym referring to the South American race of O. rufipogon.
