Some of these foods were imported from other cultures. Significant changes occurred with the colonization of the Americas and the introduction of potatoes, tomatoes, capsicums, maize and sugar beet—the latter introduced in quantity in the 18th century.

Agatha of SicilyAgatha of Sicily (231 – 251 AD) is a Christian saint. Her feast is on 5 February. Agatha was born in Catania, part of the Roman Province of Sicily, and was martyred 251. She is one of several virgin martyrs who are commemorated by name in the Canon of the Mass. Agatha is the patron saint of Catania, Molise, Malta, San Marino, Gallipoli in Apulia, and Zamarramala, a municipality of the Province of Segovia in Spain. She is also the patron saint of breast cancer patients, rape victims, martyrs, wet nurses, bell-founders, and bakers, and is invoked against fire, earthquakes, and eruptions of Mount Etna.
CataniaCatania (kəˈtɑːniə, alsoUK-ˈteɪn-, US-ˈtæn-, Sicilian and kaˈtaːnja) is the second largest municipality in Sicily, after Palermo, both by area and by population. Despite its reputation as the second city of the island, Catania is the largest Sicilian conurbation, among the largest in Italy, as evidenced also by the presence of important road and rail transport infrastructures as well as by the main airport in Sicily, fifth in Italy. It is located on Sicily's east coast, at the base of the active volcano, Mount Etna, and it faces the Ionian Sea.
MarzipanMarzipan is a confection consisting primarily of sugar, honey, and almond meal (ground almonds), sometimes augmented with almond oil or extract. It is often made into sweets; common uses are chocolate-covered marzipan and small marzipan imitations of fruits and vegetables. It can also be used in biscuits or rolled into thin sheets and glazed for icing cakes, primarily birthday cakes, wedding cakes and Christmas cakes. Marzipan may also be used as a baking ingredient, as in stollen or banket.
NormansThe Normans (Norman: Normaunds; Normands; Nortmanni/Normanni) were a population arising in the medieval Duchy of Normandy from the intermingling between Norse Viking settlers and indigenous West Franks and Gallo-Romans. The term is also used to denote emigrants from the duchy who conquered other territories such as England and Sicily. The Norse settlements in West Francia followed a series of raids on the French northern coast mainly from Denmark, although some also sailed from Norway and Sweden.
Kingdom of SicilyThe Kingdom of Sicily (Regnum Siciliae; Regno di Sicilia; Regnu di Sicilia) was a state that existed in the south of the Italian Peninsula and for a time the region of Ifriqiya from its founding by Roger II of Sicily in 1130 until 1816. It was a successor state of the County of Sicily, which had been founded in 1071 during the Norman conquest of the southern peninsula. The island was divided into three regions: Val di Mazara, Val Demone and Val di Noto.
Emirate of SicilyThe Emirate of Sicily or Fatimid Sicily (ʾImārat Ṣiqilliya) was an Islamic kingdom that ruled the Muslim territories on the island of Sicily between 831 and 1091. Its capital was Palermo (Arabic: Balarm), which, during this period, became a major cultural and political center of the Muslim world. Sicily was part of the Byzantine Empire when Muslim forces from Ifriqiya began launching raids in 652. Through a prolonged series of conflicts from 827 to 902, they gradually conquered the entirety of Sicily, with only the stronghold of Rometta, in the far northeast, holding out until 965.
PalermoPalermo (pəˈlɛərmoʊ,_-ˈlɜːr- , paˈlɛrmo; Palermu paˈlɛmmʊ, locally also Paliemmu or Palèimmu) is a city in southern Italy, the capital of both the autonomous region of Sicily and the Metropolitan City of Palermo, the city's surrounding metropolitan province. The city is noted for its history, culture, architecture and gastronomy, playing an important role throughout much of its existence; it is over 2,700 years old. Palermo is in the northwest of the island of Sicily, by the Gulf of Palermo in the Tyrrhenian Sea.
