Rendang
Rendang (ˈrəndɑːŋ ; rənˈdaŋ) is a Minangkabau dish. It is a rich dish of meat that has been slow cooked and braised in a coconut milk seasoned with a herb and spice mixture until the liquids evaporate and the meat turns dark brown and tender, becoming caramelized and infused with rich flavours. It originated from the Minangkabau region in West Sumatra, Indonesia. It has spread across Indonesian cuisine to the cuisines of neighbouring Southeast Asian countries such as Malaysia, Singapore, Brunei and the Philippines.
Lontong
Lontong is an Indonesian dish made of compressed rice cake in the form of a cylinder wrapped inside a banana leaf, commonly found in Indonesia, Malaysia and Singapore. Rice is rolled inside a banana leaf and boiled, then cut into small cakes as a staple food replacement of steamed rice. The texture is similar to those of ketupat, with the difference being that the ketupat container is made from woven janur (young coconut leaf) fronds, while lontong uses banana leaf instead. Filipino cuisine (lutong Pilipino/pagkaing Pilipino) is composed of the cuisines of more than a hundred distinct ethnolinguistic groups found throughout the Philippine archipelago. A majority of mainstream Filipino dishes that compose Filipino cuisine are from the food traditions of various ethnolinguistic groups and tribes of the archipelago, including the Ilocano, Pangasinan, Kapampangan, Tagalog, Bicolano, Visayan, Chavacano and Maranao ethnolinguistic groups.
Indonesian cuisine
Indonesian cuisine is a collection of various regional culinary traditions that formed the archipelagic nation of Indonesia. There are a wide variety of recipes and cuisines in part because Indonesia is composed of approximately 6,000 populated islands of the total 17,508 in the world's largest archipelago, with more than 1,300 ethnic groups. There are many regional cuisines exist, often based upon indigenous culture with some foreign influences. Indonesia has around 5,350 traditional recipes, with 30 of them considered the most important.
Singaporean cuisine
Singaporean cuisine is derived from several ethnic groups in Singapore and has developed through centuries of political, economic, and social changes in the cosmopolitan city-state. Influences include the cuisines of the Malays/Indonesians, the Chinese and the Indians as well as, Peranakan and Western traditions (particularly English and Portuguese-influenced Eurasian, known as Kristang). Influences from neighbouring regions such as Japan, Korea, and Thailand are also present.
Cendol
Cendol ˈtʃɛndɒl is an iced sweet dessert that contains droplets of green rice flour jelly, coconut milk and palm sugar syrup. It is commonly found in Southeast Asia and is popular in Indonesia, Malaysia, Brunei, Cambodia, East Timor, Laos, Vietnam, Thailand, Singapore, and Myanmar. Next to the green jelly, additional toppings might be added, including diced jackfruit, sweetened red azuki beans, or durian. Earliest written records of the word cendol or tjendol (Dutch spelling) can be traced to dictionaries and books of the 19th century in the Dutch East Indies (now Indonesia).
Riau Islands
The Riau Islands (Kepulauan Riau) is a province of Indonesia. The capital of the province is Tanjung Pinang and the largest city is Batam. It shares a maritime border with Riau and Jambi to the east, Bangka Belitung Islands to the south, Singapore to the northeast, Malaysia and West Kalimantan to the west, and Vietnam and Cambodia to the north. It also shares a maritime border with the municipality of Kalayaan in the province of Palawan of the Philippines to the east.
Malaysian cuisine
Malaysian cuisine consists of cooking traditions and practices found in Malaysia, and reflects the multi-ethnic makeup of its population. The vast majority of Malaysia's population can roughly be divided among three major ethnic groups: Malays, Chinese and Indians. The remainder consists of the indigenous peoples of Sabah and Sarawak in East Malaysia, the Orang Asli of Peninsular Malaysia, the Peranakan and Eurasian creole communities, as well as a significant number of foreign workers and expatriates.
Durian
The durian (ˈdʊəriən, ˈdjʊəriən) is the edible fruit of several tree species belonging to the genus Durio. There are 30 recognised Durio species, at least nine of which produce edible fruit. Durio zibethinus, native to Borneo and Sumatra, is the only species available on the international market. It has over 300 named varieties in Thailand and 100 in Malaysia as of 1987. Other species are sold in their local regions. Named in some regions as the "king of fruits", the durian is distinctive for its large size, strong odour, and thorn-covered rind.
Malay world
The Malay world or Malay realm (Indonesian/Malay: Dunia Melayu or Alam Melayu) is a concept or an expression that has been used by different authors and groups over time to denote several different notions, derived from varied interpretations of 'Malay' either as an ethnic group, as a racial category, as a linguistic group or as a cultural group. The use of the term Malay in much of the conceptualisation is largely based on the prevalent Malay cultural influence, manifested in particular through the spread of the Malay language in Southeast Asia as observed by different colonial powers during the Age of Discovery and spread of Islam.
