"Lye hominy" is a type of hominy made with lye. The process of nixtamalization has been fundamental to Mesoamerican cuisine since ancient times. The lime used to treat the maize can be obtained from several different materials. Among the Lacandon Maya who inhabited the tropical lowland regions of eastern Chiapas, the caustic powder was obtained by toasting freshwater shells over a fire for several hours.
Mesoamerican chronologyMesoamerican chronology divides the history of prehispanic Mesoamerica into several periods: the Paleo-Indian (first human habitation until 3500 BCE); the Archaic (before 2600 BCE), the Preclassic or Formative (2500 BCE – 250 CE), the Classic (250–900 CE), and the Postclassic (); as well as the post European contact Colonial Period (1521–1821), and Postcolonial, or the period after independence from Spain (1821–present). The periodisation of Mesoamerica by researchers is based on archaeological, ethnohistorical, and modern cultural anthropology research dating to the early twentieth century.

Mexican cuisineMexican cuisine consists of the cooking cuisines and traditions of the modern country of Mexico. Its earliest roots lie in Mesoamerican cuisine, but also Iberian Europe. Its ingredients and methods begin with the first agricultural communities such as the Olmec and Maya who domesticated maize, created the standard process of nixtamalization, and established their foodways. Successive waves of other Mesoamerican groups brought with them their cooking methods.
