This lecture discusses a multidisciplinary project focusing on evaluating food quality, particularly dairy products, through collaborations between various partners specialized in human nutrition, microfluidics, bio-microsystems, and biochemistry. The project aims to develop a microfluidic analytical platform mimicking the gastrointestinal tract to screen food for health evaluation by analyzing biomarkers in the blood. The lecture covers the design of CMOS-based sensors, cellomic applications, and the interaction between food and inflammation biomarkers. It also explores the cultivation of epithelial cell layers, immune cell reactions, and the development of a miniaturized chip for cell culture and biomarker detection. Additionally, human studies on the response to different meals are discussed, highlighting differences in glucose and insulin levels between lean and obese individuals.
